In the wooded hills of Le Marche in central Italy, there exists a kind of quiet devotion. Just before dawn, expert truffle hunters set out into the forest with only their dog and a torchless path ahead. It is not just tradition. It is a centuries-old art – and one passed down through generations. Foraging Black Summer truffles is an elusive craft, governed by regional law and fiercely protected knowledge. Locations are never shared. Dogs are trained with care and patience over many years. The truffles themselves – known as the “black diamonds of the kitchen” – are unearthed from beneath the roots of holm oak and hazelnut trees, and only the most aromatic, mature specimens are selected.
Our Black Summer truffles are sourced from the lush woodlands that surround the Catria and Nerone mountains – a region long celebrated for its soil, its climate and its culinary treasures. Here, the season runs from June to August. Hunting, amid the silence of the trees and the scent of wet earth, is carried out with special tools designed to disturb the ground as little as possible, and every hole dug must be carefully refilled to protect future harvests. This is slow, exacting work – and its rewards are rare.

Truffle Trove brings together two luxuries: the rich, creamy tang of extra mature Cheddar and the subtle, aromatic depth of Black Summer truffle – with hints of hazelnuts, wild mushroom and forest floor. Sealed in pure white wax, it is beautiful on the outside and bold within. Serve it as the centrepiece of a cheeseboard. Shave it into risotto. Pair it with pasta, eggs, steak, a coupe of chilled Champagne or simply savour it with nothing else at all. This is cheese for indulgence, crafted with purpose and care.
